We welcomed Andy onto the show this week to talk all things big wall, winter expeditions and doing things the hard way.
It’s safe to say that Andy has made his way through life so far by pushing himself and deliberately pitting himself against his own barriers. From a young age he learned to climb and handle himself in the outdoors and progressed from there, teaching himself the ropework skills he would need to climb big walls like El Capitan. Since then Andy has become a well-known and award winning British climber, writer and speaker.
This episode is a little bit different to usual but we really hope that you enjoy it, Andy has done a lot to talk about in his life and this only really covers the tip of the iceberg.

The future of hunting - with Tommy's Outdoors

Tommy’s Outdoors is a podcast and blogsite about biodiversity, conservation, hunting and fishing, rewilding and more. Richard Prideaux was invited onto the podcast to talk about the future of hunting as he perceives it.
With the current decline in wildlife populations alongside the growing human populations and an increasingly large disconnect with the rest of nature, hunting appears to be falling increasingly out of favour with the general public. Add to all of this the influences of social media and those who use it and the future could look rather bleak for the next generation of hunters and anglers.
Richard and Tommy delve into how more recent changes in the way that the outdoors is presented to people, and even the psychology of what we eat, is affecting the overall picture of what it means to be out hunting whether for sport or food. They discuss whether it could be that we are not educating people enough about what hunting entails and how it is important for our economy, culture and wildlife conservation as a whole. The changes in access laws in the early 2000s, and increased availability of outdoors equipment at affordable prices have enabled more people to spend time outdoors in wilder places, trying to connect with nature. However we haven’t seen an increase in understanding of these environments. What we have actually witnessed is a sense of entitlement that humans should be able to use the rest of nature to help themselves and to enjoy themselves, wild spaces are now seen more as a playground to visit than an intrinsic part of our life.
What it comes down to is really a need for honesty and openness from organisations on all fronts, be they related to sports which take place outdoors, rambling and hiking, fieldsports, farming or conservation. Wider discussions involving people from all fronts to lead the way and find common ground could be a useful way to ensure that future generations have the same (or better) opportunities as us.

This is a topic which has come up time and again on our Modern Bushcraft courses and as part of discussions with guests on our podcasts and followers over on our discord server. This time the source was Dave in Missouri who messaged us with this question at precisely the right time to get into a video.
Original Outdoors offers training in the UK and overseas, guiding expeditions, leading courses about wild food, navigation, bushcraft and survival. Alongside this we also train the military, police and other organisations in remote lone working, outdoor safety and man tracking through our sister brand Outdoor Professional. This experience and wider knowledge from constant learning have led to an in depth explanation of how we categorise these four overlapping subjects here at Original Outdoors.
Put very simply, camping is essentially sleeping outside in a planned or semi-planned situation. The shelter used could be a tent, hammock, swag, bivvy or other similar setup. The key point is that it is an intentional activity, this separates it clearly from survival which is not. Survival is something which you have to do when an unintended and unplanned event occurs and puts you in a position whereby you are using skills and equipment to get through a bad situation and simply stay alive. When you go camping, or if you end up in a survival situation you might use bushcraft skills.
The term ‘bushcraft’ has taken on multiple meanings, particularly in recent years where it’s definition has completely changed, but taken back to it’s roots it means the craft of living in the bush. In countries like the UK where we don’t have bush habitat we can apply it to our native habitats like woodlands and scrub. The word craft doesn’t here relate to building or handicrafts, it means skills and knowledge, essentially common sense (for living and thriving in wilderness like environments). Primitive skills are the skills of our ancestors, there isn’t an exact timeline break or cut-off, nor does it mean a way of life that was or is lesser than the average modern day way of life. On a broad level primitive skills can be defined as those that existed before a very complicated and hierarchical structured way of doing things.

Rabbit and bacon casserole recipe
Rabbit and bacon casserole
RECIPE
Like many people, my introduction to sourcing wild meat has been through small game, namely rabbits and grey squirrels. Here in the UK both of these are considered ‘pests’, grey squirrels in particular are actually an invasive, non-native species which has had a dramatic impact on our native red squirrels. Rabbits are more of a pest species than being of particular ecological concern, they graze the grass which is carefully cultivated by farmers for their livestock, and they dig large warrens in fields and hedgerows, creating holes everywhere which can break the legs of animals and people if your footing goes awry. Rabbits are, in the main, successful in our area and the population is certainly stable if not increasing on the farms which we visit.
They are also very good eating.
Rabbit meat isn’t particularly gamey if the carcass is paunched (the guts removed), skinned and then chilled soon after being dispatched. It is likened to chicken and this is about right, although it is very lean. When cooking rabbit you will need to use additional fat and this is particularly worth noting if you plan on cooking it rotisserie style or pegged out by an open fire, if you are cooking a rabbit this way then make sure to bring fat with you for basting.
My favourite way to cook rabbit is on the bone in a casserole. The following recipe is based upon that of Hugh Fearnley-Whittingstall from his ‘Cook on the Wild Side’ series many moons ago.

Equipment
- Knife
- Chopping board
- Frying pan
- Spatula
- Slotted spoon
- Large pot with lid
Ingredients
- 2 rabbits – skinned and jointed
- 8oz / 225g streaky bacon cut into slices
- 1 tablespoon olive oil or dripping
- 2 carrots, sliced
- 1 leek, sliced
- 300ml / 10fl oz stock – this can be made with the heads and trimmings or simply chicken stock
- 2 cloves garlic, diced or minced
- salt, pepper and herbs to taste – oregano, parsley, basil, thyme and rosemary all work well
Firstly check that your pot is large enough for all of the rabbit and vegetables, without too much spare room. Heat the oil in a frying pan and fry the bacon over a low heat. Be careful to not let it get crispy and once it has released plenty of fat, remove it with a slotted spoon into the pot.
Fry the rabbit joints in the sizzling bacon fat until brown and then place in pot on top of the bacon. Then gently fry the carrots and leek until they start to take on colour, remove with slotted spoon and place around the meat in the pot.
Add the stock, herbs and garlic to the pot with salt and pepper (only a little, you can always add more later if needed) The liquid should cover the meat, add a little more stock or water if you need to.
Bring the casserole to a simmer, cover and cook for 1 hour and 15 minutes. Serve up joints of the rabbit and spoon over the bacon and vegetables with plenty of the gravy from the pot. Our favourite accompaniments are jacket potato and buttered greens, such as broccoli or savoy cabbage.
NOTES:
Rabbit is easiest cooked on the bone as the meat does not detach easily when raw, but can be pulled off with a fork before serving if you prefer. Cooking with the bones also gives a fantastic flavour.

We often come across content about bug out bags and people setting off to adventure around the world, but something which isn’t always talked about alongside the flat lays…is fitness.
The ability to carry your gear comfortably, stay upright when walking over difficult terrain, pull out an extra 30% or more of effort when required, and heal quickly from injury is all related to fitness.

Hunting deer and surviving Africa with Barry Stoffell..
A guest episode with Barry Stoffell, a hardrock exploration geologist who has led groups as first boots on the ground in some very interesting places. In Africa he encountered hazards presented by the environment, wildlife and people. Barry highlights how important his early career was for training in how to deal with difficult situations on these expeditions, and talks about some of the lasting ingrained behaviours.
He has lived and worked in environmental extremes from the equator to the Arctic circle and now resides in Southwest Ireland where the predominate weather is rain. Barry now writes for the Shooting Times and Country magazine, manages deer, undertakes some less hazardous geology work and handcrafts beautiful knives.

At the end of every episode we share our 3 principles of modern outdoor survival. They seem fairly self-explanatory but, we decided to give you our spin on what they mean to us. It also seems like a suitable opening episode for season 2.
Remember “making good decisions at the right time” means using your knowledge and experience to ensure that your endeavours go the direction which you want.
Prioritising training over shiny new equipment doesn’t mean to not buy equipment which you need, or even want. However it does mean that skills are extremely important and increasing knowledge and skills related to your chosen outdoor endeavour is generally more useful than the latest gadget.
And always remember….Instagram is not your training provider. It can be a source of information when assessed, and it is a fantastic source of inspiration….but it is also full of images which don’t reveal the whole truth about their creator.

Richard and Terry talk through Cooper’s colour code and it’s relevance for daily life and any time spent in the outdoors. Identified by Lt. Colonel Jeff Cooper, the colour code of situational awareness is a tool to identify the appropriate mindset and awareness level in any given situation.
